The main component of the Lanzarote cuisine is the fish of which the coast around the island offers a great diversity of especies.

The first to be mentioned of the typical dishes is the sancocho, cooked fish with kneaded gofio (toasted maize flour) and served with mojo picón (a hot sauce) that gives it a especial taste.

Other tasty fishes are the vieja (parrotfish), cooked with all its scales and served with oil and vinegar, and the tollo or cazón (spiny dogfish) first dried and then flavoured with mojo picón and other sauces. But, we should neither forget to mention the queso de cabra (goat cheese) which is served as starter nor the papas arrugadas con mojo (Canarian potatoes boiled in their jacket with lots of salt and then served with a green or red Canarian sauce).
